French Toast with brandied lemon butter

Ingredients
4 Eggs
2 1/2 tablespoon sugar
1 cup whole milk
1/4 teaspoon vanilla extract
12 thick slices of bread butter
Powdered sugar
1/2 teaspoon salt

For Brandied Lemon Butter
1/2 cup butter
1 cup sugar
Juice of 2 lemons
4 teaspoon grated lemon rind
3 oz brandy
Procedure:

  • In a bowl beat eggs, sugar, salt, milk and vanilla.
  • Soak bread butter in the above mixture.
  • Now, heat butter over medium high heat in a pan and bake bread in the pan until it turns slightly brown on each side. Repeat the process with each bread.
  • For brandied lemon butter melt butter over low heat. Pour the melted butter into a dish. Wash pan and pour butter back in the pan and add the sugar. Stir constantly until sugar dissolves. Add lemon juice, rind, and brandy; stir until smooth.
  • Pour it over hot French toast and serve your french toast.
  • Sprinkle powdered sugar over toast, if desired and your french toast is ready to be served.

Breakfast Pizza

Ingredients
6 Eggs
8 oz grated mozzarella cheese,
1 1/2 c milk
1 onion
salt and pepper to taste
1 md ringed green pepper
Few mushrooms
1pizza crust
olive oil
Procedure:

  • Chop 1/4 of the onion and onion rings out of the remaining 3/4.
  • Make sure that you have a fairly high ridge on the pizza crust as the there is a lot of mixture which is fairly watery.
  • Beat eggs lightly and add mozzarella cheese, milk, onion, salt and pepper in it. Mix them gently.
  • Brush olive oil over your pizza base.
  • Now pour mixture over the pizza crust and put green pepper, onion rings, and mushrooms over the top of the pizza.
  • Bake the pizza at 450 degrees F. for about 15 to 20 minutes, or until crust is brown and egg mixture is set.

Berry smoothies

Ingredients
1-1/2 cups dark pitted, unsweetened sweet frozen cherries
1/2 cup frozen blueberries
1 cup non-fat vanilla soy milk
1 Tbsp. frozen lemonade concentrate
1/2 cup low-fat lemon yogurt
Procedure:

  • Put frozen cherries and blueberries in the bottom of a blender.
  • Top with vanilla soy milk and add remaining ingredients.
  • Puree it until smooth. Continue blending until all of the fruit is ground up.
